本裝置利用油與水的密度的不同，在停留時(shí)間適當(dāng)?shù)那闆r下， 使油與水沉淀分離，從而達(dá)到撇油的目的。

裝置分三個(gè)腔室，廚房灰水首入裝置腔室，在此 腔室內(nèi)灰水入口處有形擋板，降低了水的流速和含油污水的攪動(dòng)。在腔室內(nèi)停留一定時(shí)間后，油脂將上浮， 分離后的水進(jìn)入腔室。當(dāng)繼續(xù)有灰水進(jìn)入時(shí)，使腔室內(nèi)的水進(jìn)入第三個(gè)腔室，油脂將保留在二腔室上部， 分離后的水從灰水排放水口處排出。
